Creating a Happy Lunch with Propercorn




Before I go into this post let me start by saying this is the first food-related piece I have ever done and oh my goodness I don't know how food bloggers cope! This was a very lengthy process and I'm not entirely sure my creation is Pinterest/Instagram worthy but hopefully with a bit of practice I'll get there....

I am one of the least adventurous people when it comes to food so I was so excited when the delicious popcorn company Propercorn teamed up with nutritionist Judith Wartman to create this incredible recipe and encourage more people to eat themselves happy! According to Judith's research, eating carbohydrates like sweet potato or popcorn can alleviate emotional stress and control cravings.

So Propercorn kindly sent me some ingredients to create my own mood-boosting meal - Roasted Corn, Sweet Potato Noodle and Avocado Salad with Toasted Buckwheat Dukkah.






Armed with all my tasty, fresh ingredients I got cracking with the recipe! This is a vibrant twist on a cobb salad combining creamy avocado with crunchy spiced dukkah (something I had never heard of before).

To make your own simply spiralise a sweet potato (again something I had never thought of doing - I usually just have courgetti) and roast in the oven with peppers and cherry tomatoes. Then boil two corn on the cobs until soft and lightly griddle.

Once the potato, peppers and tomatoes are cooked add parmesan, olive oil and chilli flakes. Serve with the corn and add kale (or salad of your choice), sliced avocado and top with spring onion and dukkah!



This did require a lot of preparation but I think it's because I was trying to follow the recipe down to a T - and had to continuously pause to take photos! Once the meal was ready I was so pleased with how it turned out as it's one of the most delicious meals I ever had! 



Best of all a little went a long way and I had enough left over to keep for a lunchbox for work. Propercorn also kindly sent me a bag of their new flavour - Smooth Peanut & Almond - to enjoy alongside it. It's safe to say I am one happy luncher now!
